A finales del siglo XIX su producci\u00f3n mundial se dispar\u00f3 de 250 mil toneladas por a\u00f1o a 8 millones de toneladas anuales. Fue durante los a\u00f1os 1900 que su consumo se introdujo de manera masiva en el mercado, principalmente en bebidas azucaradas como refrescos y jugos. Diversos estudios han identificado que el az\u00facar es uno de los alimentos m\u00e1s consumidos en el planeta, y se ha demostrado que puede ser tan adictiva como una droga.<\/p>\n<p>La adicci\u00f3n al az\u00facar se genera a trav\u00e9s de un proceso de tres partes. La primera etapa se identifica por atracones, es decir, un consumo ilimitado de az\u00facar. Esto nos hace sentir bien debido a la liberaci\u00f3n de dopamina, causando una sensaci\u00f3n de felicidad, pero conforme pasa el tiempo el cuerpo se acostumbra a tener estos niveles de az\u00facar en sangre as\u00ed que la dosis debe ser cada vez mayor para poder lograr el estado de felicidad deseado. La segunda etapa se llama codependencia, y es aqu\u00ed cuando la persona ya se volvi\u00f3 dependiente a la sustancia, por lo cual, si pasa largos periodos sin su consumo aparecer\u00e1n s\u00edntomas parecidos al s\u00edndrome de abstinencia (temblores, debilidad, escalofr\u00edos, cefalea y deshidrataci\u00f3n). La tercera etapa consiste en el deseo por volver a consumir az\u00facar y por ende la reca\u00edda, la cual casi siempre consiste en consumir la sustancia en cantidades mucho mayores a la \u00faltima vez, y as\u00ed es como comienza el c\u00edrculo vicioso.<\/p>\n<p>Es claro que el az\u00facar es necesario en peque\u00f1as cantidades para generar energ\u00eda. Sin embargo, un consumo en exceso puede llegar a desencadenar enfermedades cr\u00f3nicas-degenerativas. Estas pueden tener un factor en com\u00fan: los malos h\u00e1bitos de alimentaci\u00f3n, que pueden causar el s\u00edndrome metab\u00f3lico. Este s\u00edndrome puede afectar a todo el cuerpo y abarca las siguientes enfermedades: cardiopat\u00edas, obesidad, diabetes, hipertensi\u00f3n, problemas renales, algunos tipos de c\u00e1ncer, h\u00edgado graso, inflamaci\u00f3n, ovario poliqu\u00edstico, etc.<\/p>\n<p>Debido a su alta incidencia, el s\u00edndrome metab\u00f3lico ha llamado la atenci\u00f3n de muchos investigadores y hoy en d\u00eda se sabe que el consumo excesivo de az\u00facar act\u00faa como un factor importante en el deterioro de la salud a nivel mundial, por lo cual es importante ser conscientes de la cantidad de az\u00facar que consumimos, y llevar una alimentaci\u00f3n balanceada y lo m\u00e1s natural posible, evitando productos procesados y con az\u00facares a\u00f1adidos.<\/p>\n<p>&nbsp;<\/p>\n<p>Bibliograf\u00eda<\/p>\n<p>Palma Ramirez, G., Navarro Fernandez, A., Lozada Castillo, I., &amp; Hernandez Valdes , F.
